Vegan Pumpkin Cookies...

From the test kitchen at Andy's Market this week we bring you a recipe for a tasty pumpkin treat.  These cookies were a crowd pleaser...even with the picky, young, taste testers.





 Vegan Pumpkin Cookies



3/4 cups pumpkin puree
8oz dates finely chopped
3 tbs canola oil
2 tbs agave nectar
2 cups rolled oats
2/3 cups finely ground almonds
1/3 cup shredded coconut
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1/4 tsp ginger
1/2 tsp salt
1 tsp baking powder
1 cup dairy-free chocolate chips


 Combine coconut, almonds, oats, salt, spices and baking powder in a bowl.  Set aside.

 Blend together in a blender or food processor dates, oil, agave nectar, and pumpkin until smooth.  Hand mix dry ingredients with wet ingredients and chocolate chips.


 Preheat oven at 350 degrees.  Place cookie dough on a cookie sheet greased or lined with parchment paper.
Bake for 13-15 minutes.



Cool and ENJOY!

  1. This sounds interesting, so I wanted to print it out so I could use it conveniently. BUT.....I could not find a connecting link for PRINT.
    What do you suggest? Yes, I did copy it out long hand......the old fashioned way !!
