Soup weather....

It's officially soup making weather as the leaves have begun to change color and frost has appeared on the lawn in the morning.  Today in the Andy's Market test kitchen we cooked up one of Mrs. A's all time favorite soups....Split Pea Soup.  We're happy to share her recipe with you today....


Split Pea Soup

Half an onion diced
2 large carrots diced
2 stems off a stalk of celery diced
2 cups uncooked split peas
1 cup of uncooked pearl barley
6 cups vegetable broth
2 cups water
salt and pepper to taste

Sauté carrots, celery and onions until the onions are translucent in a large pot. 




Add vegetable broth and water, bring to a boil.


Reduce heat and add pearl barley and split peas.  Cover and cook for approximately an hour stirring occasionally.  Add salt and pepper to taste.



This soup is stick to your bones hardy, all the while chalked full of goodness.
