Connie's Cookies

The very best food is both nutritious AND delicious all at the same time. The Andy's Market Test Kitchen brings you one of our favorite recipes that meets these two requirements. Connie's cookies are full of goodness and so good you can't eat just one. Enjoy the recipe and pass it on to others...


Connie's Cookies

1/2 cup almond butter
1/4 cup honey
1/2 cup dates
1/3 cup water
1/2 tsp vanilla
1/2 cup coconut
1/2 cup raisins
1/2 cup chopped walnuts
3/4 cup oats
1/2 cup oat flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves


Combine honey, dates, water, vanilla and almond butter in a food processor until smooth.


Pour from food processor into a mixing bowl or stand mixer and combine with that the raisins, coconut, chopped walnuts, oats, oat flour, salt, baking soda and spices.



Preheat oven at 350 degrees and scoop onto cookie sheet.
Bake in a preheated oven for 15 minutes.
Allow cookies to cool....and enjoy!
For a variation on this recipe try adding in things like chopped apricots, cranberries or other dried fruits or favorite nuts. The possibilities are endless for this delightful wheat and dairy free cookie.
